Pecans are tasty eaten out-of-hand but also when they’re incorporated into sweet or savory dishes. Their legacy in the Mesilla Valley is as important as that of chile, both of which were refined by the NMSU Agricultural College. For this reason, the NMSU Extension Office produced publications about both how to grow pecans and protect them from pests, and how to cook with them.
These and other publications can be seen in the “Growing the Mesilla Valley: NMSU Extension Office Through the Years” exhibit at the Branigan Cultural Center on view through Saturday, August 15.
