It’s that time again
What to feed fellow tomato canners. Tomato pie (or galette) on repeat until frost. Roll out one pie dough, schmear with Dijon, scatter with 4 oz grated Gruyère, sliced tomatoes. Pleat the dough around the filling. Egg wash, salt and pepper. Bake at 400F for 40 minutes on a pizza stone or steel. Cool at least an hour before eating. Alternatively, schmear with Mayo, scatter grated sharp cheddar and some sliced scallions, add sliced tomatoes, pleat, egg wash, bake. It’s easy breezy summer food. 🍅
