Healthy lowcarb zuchinni chips! These are so good! .This is one of those recipes you should eat right away as they can get soggy if they sit for a while.Here’s how I made it:.1.First, instead of breading, I used freshly grated pecorino cheese (i prefer it over parmesan, but you can use parmesan). Add 1.5 cups to a bowl, then sprinkle on about 1-2 tsp oregano and 1/2 tsp smoked paprika. Give it a mix with your hands and set aside..2.Next, crack one or two eggs into a bowl, whisk, and set aside..3.Grab zucchini and cut into desired shape - coins, sticks, wedges, your move. Then layout over a kitchen or paper towel and press down to absorb any excess moisture..4.When you’re ready, dip the zucchini in the egg wash using a fork, use your hands to cover it with the cheese and seasoning mixture, then lay on an oven sheet over some parchment paper..5.Pop into a preheated oven (425F) for about 10 minutes before flipping over and cooking for another 4-5 mins. Time varies by oven and size of your zuchini so keep an eye on it and remove when the top has gotten nice and golden brown. If you’re making it thicker (like fries), you’ll be baking these for about 12-15 minutes on each side..6.Serve immediately with any sauce of your choice (ranch would be !!!) .7.I made a simple chipotle tahini sauce. Add 3-4 tablespoons tahini in a bowl, add 1.5 tsp chipotle adobo, a pinch of sea salt, minced garlic or garlic powder, juice from half a lemon, and mix well. Tahini tends to harden up, so slowly drizzle in some water while mixing to loosen it up if that happens.
