Bakers, did you know that a bitter chocolate cake usually means one (or more) of these went wrong 👇🏽

Here’s how to avoid it like a professional baker:
1️⃣ Choose the right cocoa powder.
Natural cocoa is sharper and more acidic
Dutch-processed cocoa is smoother and less bitter
👉 If bitterness is your issue, switch to Dutch-processed cocoa
2️⃣ Measure cocoa correctly.
Too much cocoa = instant bitterness
✔️ Always level your measurements
✔️ Don’t “add small extra for color” — it usually backfires.
3️⃣ Bloom your cocoa powder properly.
Dry cocoa tastes harsh.
Mix cocoa with warm milk, or hot coffee before adding to batter.
This unlocks chocolate flavor and removes raw bitterness.
4️⃣ Balance with sugar (don’t reduce your sugar in your recipe)
Sugar is not just sweetness — it balances bitterness.
Cutting sugar drastically will make chocolate taste aggressive.
5️⃣ Watch the baking soda.
Too much baking soda leaves a metallic, bitter aftertaste.
