Maarten Gibson ( ) was eight years old, home alone in France, figuring out lunch by himself. That's where it all started.
Born in the Netherlands, raised across France and Spain, his palate was always going to end up somewhere interesting.
For three years he held down a corporate job. Then he handed in his notice and bet on food instead.
