Leftover fried rice doesn’t have to be… leftover energy.
We’re giving it new life. A glow-up. A second chapter.
This is the “I still care about myself” lunch.
These Fried Rice Lettuce Cups are fresh, spicy, crunchy — but still have all the flavour from last night’s fried rice situation (you know the one 👀).
I love using microwave pouches because the rice cooks perfectly fluffy the first time — so even the leftovers are delicious.
Nothing soggy, nothing sad, just ready for the remix.
Save this for the next time you open the fridge like:
“Ok but what are we doing with this?”
You’ll Need:
• Leftover fried rice (made with Jasmine or Basmati pouch)
• Lettuce cups (butter or iceberg) or your favourite leaf. In the video, I used lettuce leaves and perilla/shiso leaves.
• Fresh chilli
• Lime wedges
• Coriander to finish
To eat, I spoon the rice onto the fresh leaf, top with some lime, and chilli oil if you like that, and you’re done! Such a great way to get everyone eating with their hands and it always encourages great conversation!
