Il Porcellino is a famous bronze statue of a wild boar in Florence, Italy.
People rub its snout for good luck, which is why the nose is shiny. There’s also a tradition where you place a coin in the boar’s mouth and let it fall - if the coin drops through the grate below, it’s said to bring good fortune and a return to Florence.
Our Porcellino starts with a golden sweet potato puree and smoked scamorza. Then we add guanciale and nduja.
And finish with a grating of parmigiano.
