Today is Kale Day. While many people cringe at the thought of eating this leafy green cruciferous vegetable, many more people are reaping the health benefits of consuming it regularly.

Kale is packed with fibre, antioxidants and nutrients which may support the body against:

* Diabetes
* Cardiovascular disease and high cholesterol
* Cancer
* Osteoporosis
* Constipation
* Cognitive decline and dementia due to ageing
* Macular degeneration, glaucoma and other eye diseases

Kale can be eaten in a salad, steamed, sautéed with garlic and olive oil, added to smoothies, made into Kale chips, etc. Be sure to scrunch the leaves a little with your hands before preparing as this will make it tastier and easier to digest. Eating a cup a day will provide many health benefits and slow the ageing process.

If you have thyroid disease, avoid eating it raw. It is high in potassium so if you are taking beta blockers, please eat in moderation and check with your health provider.
