This recipe from proves that simple ingredients can create something truly special. Our 100% Australian wild-caught albacore tuna, fresh mint, roasted pistachios and a squeeze of lemon come together for a pasta that’s light, vibrant and full of flavour.
Spaghetti with Tuna, Pistachio & Mint
Serves 4 | Ready in 30 minutes
Ingredients
• 2 jars Walker’s Tuna drained & broken into chunks
• 500g dried spaghetti
• 80ml olive oil (from the jar)
• 2 garlic cloves, finely chopped
• 1 tsp Salsa Macha chilli paste
• ½ cup dry white wine
• Small handful fresh mint leaves, finely sliced
• Juice of 1 lemon
• ⅓ cup roasted unsalted pistachios, crushed
Method
1. Cook the spaghetti in a large pot of salted boiling water until al dente.
2. About 5 minutes before the pasta is ready, heat half the olive oil in a large pan and sear the tuna until lightly coloured. Remove and set aside. Add the remaining oil, garlic and chilli paste, cooking gently until softened. Increase the heat, add the white wine and simmer until reduced.
3. Drain the pasta, reserving a little cooking water. Add the pasta to the pan with half the pistachios, the tuna and mint, tossing everything together. Add a splash of pasta water if needed.
4. Season to taste, stir through the lemon juice and serve topped with the remaining pistachios.
