Bynomeans is a boutique range of non-alcoholic botanical drinks inspired by the flavours and textures of classic wine styles and varieties. Each bottle is hand-crafted by founder Tim Grimes.
The concept grew out of Tim’s time at Yellow Restaurant in Potts Point, where he became intrigued by the idea of a non-alcoholic pairing that could mirror a traditional wine pairing. The drinks Tim designed deliver dynamic flavours and reflect characteristics of specific wine varieties.
1 - Akin to an aromatic textural white wine. Notes of peach, curry leaf and thyme with a hint of passionfruit and white tea. Perfect with lighter dishes and raw seafood, it matches well with fresh herbs and subtle spices. The high acidity also allows it to cut through richer fish or poultry dishes.
2 - Riffing on a full-bodied rosé with notes of raspberry, banana and clove. Slight oiliness from carefully selected sun-dried fruit and elevated acidity allow it to stand up to richer dishes. Finishes long on the palate.
3 - Mirroring a Pinot Noir with hints of mushroom, cranberry and vanilla. Hibiscus flower adds some light tannin, with cabernet sauvignon vinegar giving complexity and weight on the palate. Fig Molasses balances and completes this light red, perfect with duck, winter vegetables and pasta dishes.
