Reimagined through an Italian-leaning lens, he's paired it with compressed watermelon, a delicate prosciutto crumb, and a bright dill-cucumber dressing; it’s the kind of festive dish that feels both nostalgic and contemporary.

Served as part of our Festive Banquet Menu this December with crispy roasted potatoes, whipped ricotta, black pepper, lemon, and sautéed greens in beurre blanc.
