Meet our Bread & Butter Pudding Latte — a nostalgic winter special built around our Costa Rica Single Origin.
Ingredients
• Double ristretto of Costa Rica Single Origin
• 30g raisin syrup
• 230ml milk of choice
• Condensed milk cold foam
• Muscovado sugar, to garnish
Raisin Syrup
Simmer 150g muscovado sugar, 150g raisins, and 200ml water on low heat for 15 minutes. Remove from heat and blend until smooth. Add a little extra water if needed to loosen.
Condensed Milk Cold Foam
Whisk together 3 parts cream, 2 parts milk, and 1 part condensed milk until fluffy but still pourable.
Method
Add the double ristretto and 30g raisin syrup to a tumbler glass and stir to combine.
Steam milk with slightly less air than a standard latte.
Pour milk into the espresso base.
Top with a generous layer of condensed milk cold foam.
Finish with a sprinkle of muscovado sugar.
