The Australia Day ๐ฆ๐บPublic Holiday is coming up next weekโฆ So Who loves lamingtons?? ๐โโ๏ธ
Well hereโs a healthy take on the Aussie classic. These easy no bake lamington balls will be sure to hit the spot!!
๐๐ก๐๐ฅ๐๐๐๐๐ก๐ง๐ฆ
BALLS:
*1 1/2 cups raw cashew nuts
* 1 cup desiccated coconut
* 1/4 cup coconut oil
* 1/4 cup organic maple syrup, or to taste
* 1 scoop Vanilla Complete Protein
* 2 tsp vanilla bean paste or extract
RASPBERRY CHIA JAM
* 2 cups frozen raspberries
* 2 tbs chia seeds
* 1 tbs lemon juice
* 2-4 tbs pure maple syrup, to taste
CHOCOLATE COATING:
* 100g 80% dark chocolate, broken into pieces
* 2 tbs coconut oil
* 1 tsp pure maple syrup
* Extra coconut (finely-shredded), to roll the balls in

BALLS - blitz cashews in a processor until it resembles a fine meal. Add remaining ingredients and blend together.
JAM - Add raspberries, seeds, juice and syrup to saucepan and bring to a medium heat. As the fruit breaks down, mix lightly with a fork. Simmer to reduce and thicken to jam consistency. Place in a jar in fridge for 1 hour to set.
COATING - Add chocolate and oil to a double boiler. Stir while it melts. Add syrup and whisk well
ASSEMBLE - Roll mix into balls and set on a tray lined with baking paper. Place in the freezer for 10min. Remove and cut in half, scoop out a small amount from both sides so you can add a small amount of chia iam. Roll back into a ball again and then place back on lined tray in the freezer for 10 minutes.
Place extra coconut in a small bowl. Roll each ball in the melted chocolate, remove with a fork then immediately coat in desiccated coconut. Set again in freezer
NOTE - instead of the raspberry jam you can swap this out for a full raspberry placed in the centre of each ball. I use frozen raspberries as I find it easier to role without squishing.
