Nothing beats the flavors of Thai Chicken Satay with creamy peanut sauce! A must-try recipe that will transport your taste buds straight to Thailand. 🇹🇭🍢
Ingredients:
1.5 lbs (700g) chicken thigh fillets
3/4 cup coconut milk (for marinade)
1 tablespoon curry powder
1 1/2 teaspoons white sugar
2 garlic cloves, minced
1 teaspoon finely grated ginger
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons vegetable oil
Skewers
Peanut Sauce:
2/3 cup natural peanut butter
1/4 cup coconut milk
1/4 cup water
2 tablespoons soy sauce
2 tablespoons sweet chili sauce
2 teaspoons red curry paste
1 tablespoon brown sugar
Juice of 1/2 lime
Directions:
Marinate Chicken: Cut chicken into pieces. Mix coconut milk, curry powder, sugar, garlic, ginger, soy sauce, fish sauce, and oil in a bowl. Add chicken and marinate for at least 20 minutes, preferably overnight.
Prepare Peanut Sauce: Combine all peanut sauce ingredients in a saucepan over medium heat. Stir until smooth and warm. Adjust thickness by adding water or coconut milk as needed.
Cook Chicken: Thread chicken onto skewers. Heat a grill or pan over medium high and cook skewers for 3 minutes each side or until cooked through.
Serve: Serve chicken satay with warm peanut sauce on the side.
