High-Protein Cilantro Lemon Rice (with Quinoa & Lentils)
Ingredients
* 1 cup basmati rice (rinsed)
* ½ cup quinoa (rinsed)
* ½ cup cooked lentils (brown or green work best)
* 2 cups water or vegetable broth
* ½ tsp salt (adjust to taste)
Fresh mix-ins:
* ½ cup finely chopped cilantro
* Zest of 1 lemon
* Juice of ½ lemon (fresh squeezed)
* 1–2 tbsp olive oil
Optional flavor boosters (highly recommended):
* 1 clove garlic, minced
* ¼ tsp black pepper
* ¼ tsp cumin
* Pinch of chili flakes (for heat)
