Tacos - but jazz up the nutrients!!!
Sweet potatoes cut lengthwise. Too sweet potatoes with olive oil and seasoning salt- bake face down at 400 until soft (roughly 30 min)
Top with extra lean taco meat, plain Greek yogurt (in place of sour cream), cilantro, lettuce, tomato, shredded cheese, and salsa! Enjoy!
