Christmas season calls for the traditional Bibingka.

Bibingka bigas is a baked rice cake from the Philippines traditionally cooked in a palayok (terracotta oven). It is lined with banana leaves with its main ingredients as rice flour and coconut milk usually topped with cheese, salted egg, and/or coconut. It is usually eaten during the Christmas season especially after going to Simbang Gabi (a nine-day dawn mass leading to Christmas eve).
