Our seasonal transitions are guided by what’s available close to home, allowing us to work with local producers and ingredients at their peak. As the season shifts, so do the dishes. Lighter flavours, fresh vegetables, and thoughtful combinations that reflect what spring dining in Alberta looks like right now.

From roasted beet salad with tarragon yogurt and candied pecan, to bone marrow fettuccine with umami sauce and toasted buckwheat, each dish is built with intention. Spring asparagus, seared scallops, black tiger prawns, braised lamb, and our spring risotto all highlight the balance between comfort and freshness that defines this time of year.
