Protein Chocolate Chip Banana Bread Muffins⁣⁣

4 tablespoons butter (melted then let cool a bit)
1 teaspoon vanilla extract ⁣
2 egg⁣s
2 medium ripe bananas, mashed up (if they are small bananas use 3)
1/3 cup honey
1/2 cup Fairlife skim milk
1 cup whole wheat flour
2 scoops vanilla casein protein powder (I used R1 vanilla crème)
1 teaspoon baking soda⁣
1 1/2 teaspoons cinnamon
1/2 teaspoon salt⁣
1/2 cup milk chocolate chocolate chips

Preheat oven to 350F.⁣

Put bananas, margarine, honey, vanilla, eggs and milk in bowl and mix/whisk together. Then stir in dry ingredients (flour, protein powder, baking soda, cinnamon and salt). Lastly, mix in your chocolate chips.⁣ The batter will be thick once’s you’ve mixed everything together.

Line muffin tins with liners. Fill muffin cups to the top of the liner.

This recipe makes 12 regular sized muffins. ⁣

Bake for approx. 16-18 minutes at 350F. Mine took 18 min but everyone’s oven is a little different so just keep an eye on them once you hit that 14-15 min mark!

Notes:
*with protein baking I always recommend using muffin liners as it sticks a little more than normal baking
*expect a denser muffin when cooking with protein
*recommend using on casein protein powder for baking, as it bakes much better and isn’t dry once baked as whey protein powders

Here’s a little motivation and reminder that your age has nothing to do with what you’re capable of if you put your mind to it! When it comes to fat loss lot of the times I hear “it’s too late me” or “there’s no hope for me at this point” but I promise you that is the farthest things from the truth!

To prove my point, at 60 years old my beautiful client D made an amazing transformation in 12 weeks. Her main reason for coming to me for help was so that she could head into this years fire season feeling a lot better physically and I think she’s well on her way! By the end of the 12 weeks she had even started running again and was making great progress on that as well which I think is truly amazing 👏🏻🙌🏻 I’m beyond proud of what she was able to accomplish 😀
