Molly is back and this week she is tackling one of the most indulgent dishes on our menu.
Three wines and three very different conversations with foie gras.
A Tidal Bay that plays beautifully with the apple notes in the dish, a Prosecco that cuts through the richness and resets your palate for the next bite and a Bulgarian Pinot Noir that brings earthy contrast and low tannins for a pairing that goes somewhere unexpected and completely works.
The first two walk with the dish, while the third one takes it somewhere else entirely. Molly recommends trying all three and honestly we are not going to argue with that.
