Wavy walls are an issue when there's no backslash to hide the differences. We scribe everything regardless but here's a quick few pictures on the process.

1. Set counter equidistant from the front edge of the cabinets at the amount you want the counter to overhang plus the size of scribe that works, in this case 3/8 of an inch
2. Clamp counter down and use your scribe or marking knife to run along the back wall.
3. Scribe to line using a grinder/ planer/ sander.
4. Check fit and screw it down!

Once you get in the habit of doing things the proper way then they become a part of your systems and should be implemented whenever applicable.
