One of the most debated issues when it comes to storing farm fresh eggs is deciding how long fresh eggs will remain fresh. 

Big disclaimer: how long your farm fresh eggs will stay fresh depends on a lot of different variables. Just to be clear, these are eggs straight from the coop, NOT from the store.

First, eggs that are heavily soiled I usually just discard them but that’s rare and it’s just me.
Lightly soiled eggs, I wash those in lukewarm water (somewhere between 90°F and 120°F and either cook immediately or store in the refrigerator. Never wash fresh eggs in cold water as it will allow bacteria to enter the egg. Cracked eggs are discarded or fed back to the chickens.

Secondly, the temperature inside your home plays a role as well as how you position the eggs when you store them. Eggs stored pointy side down will stay fresher longer because the blunt end of an egg has an air pocket between the inner and outer shell membranes. This gradually enlarges as the egg loses moisture during storage. Keeping the air pocket at the top helps keep the yolk centered within the egg and prevents the air pocket from rupturing, which reduces the risk of the egg spoiling. That’s why I believe eggs can stay fresher either for longer times or shorter times than those shown here depending on different conditions, which is why you should only take the following timeframes as conservative estimates.

🥚Unwashed eggs (with the bloom intact) in the refrigerator anywhere from 3 - 6 months.

🥚Unwashed eggs (with the bloom intact) on the counter about one month. (There again, crack an egg open and see how it looks or smells)

🥚Washed eggs (bloom has been removed) in refrigerator about 2 months but could be longer.

🥚Waterglassed eggs (with the bloom intact)
can last anywhere from 18 to 24 months.

The hard fast rule on this is if you are ever in doubt, just crack open the egg and no one will have to tell you if it’s spoiled. Eggs that are spoiled will smell awful and will be discolored.
