Histamine is not only an immune signaling molecule. It is also found in foods and increases as foods age, ferment, or are stored. The longer certain proteins sit after cooking, the higher the potential histamine load becomes.
This is where DAO (diamine oxidase) becomes important.
DAO is the enzyme responsible for breaking down histamine in the gut before it enters circulation. When DAO activity is reduced, histamine from food may accumulate faster than the body can clear it.
Factors that can influence DAO activity include genetic variations, gut inflammation, nutrient depletion, and chronic stress.
Consider the foods often viewed as “healthy”:

• Slow-cooked or reheated meals
• Spinach, avocado, and tomatoes
For someone with reduced histamine clearance capacity, these foods can contribute to a cumulative burden. The body may not be reacting randomly—it may be reaching a threshold.
This is why symptoms can feel inconsistent.
It may not be one specific food. It may be the total histamine load over time.
Migraines, skin reactions, sinus congestion, anxiety, and digestive discomfort can all be signs that the body is struggling with histamine balance.
The goal is not to remove nutrient-dense foods forever. The goal is understanding the body’s pathways and supporting balance.
Strategies such as eating freshly prepared foods, freezing leftovers quickly, and spacing out high-histamine foods can help reduce the overall burden.
Supporting healthy histamine metabolism involves nutrients such as vitamin C, maintaining copper balance, and supporting gut integrity.

Why?
Why are so many people still cycling through treatment? Why do people go to rehab three, five, even seven times… only to relapse within 30, 60, or 90 days?
If that continues to happen, what are we missing?
Please don’t misunderstand me. Traditional treatment saves lives. Counselling matters. Trauma therapy matters. The Twelve Steps changed my life. Medication, when appropriate, saves lives.
But after almost thirty years of watching people suffer, I began asking a different question.
What if we’ve been leaving out one of the most important organs in recovery? The brain.
What if some people leave treatment with the same dysregulated brain reward system they arrived with? What if biology is part of the missing link?
What if genetics… Reward Deficiency Syndrome… nutritional deficiencies… blood sugar instability… inflammation… and depleted neurotransmitters… are helping drive the cycle of relapse for some individuals?
Not because these factors explain every case — but because they may be an important part of the picture that deserves more attention.
That question changed my life. It led me to decades of studying recovery nutrition, neuroscience, genetics, and Reward Deficiency Syndrome. It led me to collaborate with Professor Kenneth Blum, one of the pioneers in addiction genetics. And ultimately, it led me to write “Born Addict”📘
Because I believe the future of recovery isn’t choosing between psychology and biology. It’s bringing them together.
