Low key, if I had to choose a close second it would be chicken wings, cause who doesnt love a wing Wednesday at the pub.
Side note, we probably have your favorite cut in our retail freezer. Shops open Tuesday - Saturday 8-5:530. As always, we've got retail options but our primal gig is custom cutting.
If your steers and heifers are nice and fat from that corn barley molasses finish, give us a ring so we can sort out their forever homes in your freezer!

Breaking out a bison tenderloin.
Some people like to break off the entire shortloin and pull out the tenderloin on the table. Gravity and swinging carcass are your best friend, so we do it on the rail.
