I sharpen a lot of cheap knives and I sharpen a lot of expensive knives. At this point, I can say with certainty, you definitely get what you pay for. My advice, start with one good chef/utility knife.

Steel matters. I could bore you for hours, but a reasonably good steel that won’t totally break the bank is VG10.

This is CTS-Maxamet, third hardest blade steel on earth. If you’re a knife nerd, you know how daunting this stuff is, even with diamond stones…

The new Tormek stone ate through it without hesitation.. I’m impressed πŸ˜‚πŸ”₯

When buying kn!ves, pay attention to the steel. Legitimate kn!fe manufacturers will stamp, etch or engrave the steel composition on the blade. If they don't, it's because it’s poor quality and they don't want the target buyers to know.

There's only one exception to this that I’m aware, and that’s Morakniv. Mora makes decent, well-priced kn!ves using two main steels, 1095 (which they call carbon) and Sandvik 14C28N (which they call stainless). For the price, these are πŸ‘πŸΌπŸ‘πŸΌπŸ‘πŸΌ

I can't stress this enough. There's a s**t load of companies (like Huusk Japan, link in comments) who buy extremely low quality kn!ves in bulk, stamp a brand name on them, spend a few grand on marketing, and upsell them as premium. People are out here spending $150+ on $5 kn!ves. Don't fall for it.

Decided to start posting more educational stuff, cuz lately, I seem to be getting the same questions over and over… especially when I start telling people how much some of my knives are worth

β€œWhy the hell would a knife cost more than $100. What a ripoff”

In some cases, yes, total ripoff. In other cases, $1000+ is a hell of a deal (yes that’s a thousand. Not a typo)
