Bacon & Asparagus Frittata
Ingredients (per serving)

4 cherry tomatoes
2 slices bacon
⅓ cup arugula (rocket)
2 eggs
2 tsp cream
2 tsp butter

Instructions

Cook the bacon
Slice or tear the bacon and cook it in a nonstick or cast-iron skillet over medium heat until crispy. Remove and set aside, keeping the rendered fat in the pan.

Sauté the arugula
Add the butter to the bacon fat, then toss in the arugula. Sauté gently until wilted—this should take just a minute or two.

Mix eggs and cream
In a small bowl, whisk together the eggs and cream until combined.

Add the eggs and cook
Pour the egg mixture over the arugula in the skillet. Distribute it evenly, then top with halved cherry tomatoes and the cooked bacon.

Set the frittata
Cover the skillet and cook over low to medium-low heat until the eggs are mostly set—this usually takes about 4–6 minutes, depending on the pan and heat.

Finish and serve
Once the frittata is mostly set, you can optionally slide it under a broiler or cover briefly to finish cooking the top (watch carefully). Serve warm, as is, or slide it onto a plate. Garnish with extra arugula or freshly cracked pepper if desired.

Tips & Variations

Make it heartier: Add chopped asparagus stalks, sliced mushrooms, or diced bell pepper earlier in the cooking process for extra volume.

Cheese lovers: Sprinkle crumbled feta, grated cheddar, or Parmesan over the top before covering for a melty finish.

Herbs: Fresh parsley, chives, or basil spark brightness; add just before serving.
