Looking for that special recipe to make for Mom this Mother’s Day? 🍋🍤
This Shrimp Scampi Linguini is simple, elegant and absolutely delicious. Buttery garlic, fresh lemon and sweet shrimp tossed with pasta… it feels like something from your favorite Italian restaurant, but it comes together right at home. Perfect for celebrating Mom around the table. ❤️

You’ll need:
•1-lb linguini
•4-tbs olive oil
•1-lb jumbo shrimp, cleaned (tails on for extra flavor or removed if preferred)
•8-tbs unsalted butter
•5-garlic cloves, minced
•Juice and zest of 2 lemons
•1/4-cup chopped fresh parsley
•Salt and black pepper
•1/4-cup reserved pasta water

1-Bring a large pot of salted water to a boil. Cook the linguini until al dente and reserve 1 cup of pasta water before draining.

2-In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook about 2–3 minutes per side until pink and cooked through. Transfer to a plate.

3-In the same skillet, melt the butter. Add the garlic, a pinch of salt and black pepper, and sauté for about 2 minutes until fragrant.

4-Add the lemon juice, cooked shrimp, linguini, and 1/4-cup reserved pasta water. Toss everything together for 1 minute until silky and coated. Add more pasta water a tablespoon at a time if needed.

5-Remove from heat and toss in the parsley and lemon zest. Serve immediately with fresh lemon wedges.

Simple. Elegant. Absolutely delicious.
