The tasting menu, plated for sharing, is $88 per person, with optional beverage pairings available.

Please note that we will not be offering à la carte dining on these evenings, and a vegetarian tasting menu will not be available. As the menu is served family-style, any dietary accommodations will apply to the entire table, and while we’ll do our best, we may not be able to accommodate all dietary requests.

the fillet is salted, air dried, and pan fried for the crispiest of skins, while the belly is marinated in soy, mirin, and house made kosho to highlight its richness and flavour. a concentrated carrot purée bring sweetness and mouthfeel, black tea tare adds a bit of bitterness and a hell of a lot of umami. sprinkle in some mustard green gomaae for textural contrast and freshness, and cut through it all with some lightly pickled shiitake.
