Have you been eating green beans this summer?

Growing up, my family had a vegetable garden that always had green beans and I NEVER ate them. They would yield so much that my dad used to give them out to our neighbours by the grocery bag full! They sure seemed to enjoy them 😊.

Now that I eat them, I see what the fuss is about. They can be a variety of colours too! They’re full of fibre and are rich in vitamin C and beta carotene.

My favourite way to eat them is by roasting in the oven and then tossing them in my homemade lemon vinaigrette once they’re done.
