Our beetroot plant-based charcuterie did not begin as an aesthetic exercise.
It began as a design choice.
In advanced fermentation, the substrate is never a decorative detail. It is the starting point of everything. Not every raw material has the structure, behaviour, and transformative potential required to support a process like this. That is why the choice can never be casual.
For us, beetroot is not just about colour.
It is about function, depth, and identity.
It is an ingredient that gives the process a clear direction and makes it possible to build a product that is coherent, elegant, and technically meaningful.
This, in our view, is where the difference lies between real innovation and mere spectacle:
not creating something that simply resembles an idea,
but developing something that has a true reason to exist.
We do not choose substrates to impress.
We choose them for what they are capable of becoming.
