Origin: from the front part of the back of cattle (high rib), cut between the 8th and 12th ribs, boneless

Appearance: 3 different muscle strands with a characteristic „eye“ and clear marbling

Meat structure: tender muscle meat, more marbled with fat than, for example, the rump steak from the roast beef (rear back section)

Taste: very juicy and full of flavor due to comparatively high fat content
