Cyprus based Sommelier teaches some interesting wine things probably You have never heard before...

🇲🇫 Part of the Côte de Beaune (so Côte d'Or), the Puligny-Montrachet appellation carries 4 Grand Crus and 17 Premier Crus, it's a white and red appellation which is known for one of the best expressions of Chardonnay and Pinot Noir grapes (alongside Chassagne). 
It was created in 1937 on soils separated by only a few metres from the Grands Crus. The grapevines in many cases occupy brown limestone soils, or soils where limestone alternates with marls and limey-clays. Soils are very deep in some places on the sites.
The reason I've chosen this wine as a food wine is that I cooked Tartiflette for the first time, and the dish is made with a special cheese called Reblochon, and Côte de Beaune Chardonnays are famous for being the perfect match for this cheese. 
Jean Chartron was established in 1859, so the winery has the privilege to cultivate the best plots of the area. We are talking about a 5 generations winemaker family with exceptional knowledge. 
The 2019 vintage is 100% barrel fermentated (30% new oak barrels / 70% barrels aged 1 and up to 5 years). Matured on fine lees for 12 months in barrel and 4 months in tank. 
The wine is not available in Cyprus, so many thanks to @wimbledonwinecellar for the recommendation and the chance to taste it. Simply amazing!

🇲🇫 This Village level appellation of the Mâconnais region (Saône-et-Loire) offers extremely good QPR wines. On the label, this appellation may be followed by the name of the Climat of origin.
There are 7 communes producing it: Chânes, Chasselas, Davayé, Leynes, Prissé, Saint-Vérand, Solutré-Pouilly (the commune Saint-Vérand written with letter d on the end).
📃 The AOC was granted in 1971, it lies in the South of the Mâconnais region, forming a belt around the appellation Pouilly-Fuissé. The soils (rocky backbone made of fossiliferous limestone and marly limestone) ideally suited to the Chardonnay, so the AOC is a white only appellation.
🏰 Situated in Davayé, at the foot of the rock of Solutré, the Chavet family have 12 hectares under vine, 10 of which are in the appellation of Saint-Véran.
The vines, which average around 30 years old, are planted on stoney, clay-limestone soils facing south-east to south-west.
Malolactic conversion, lees ageing for 4-5 months. Round and fresh, full of ripe pear and apples. 🍎🍏🍐🍋🍈
