Ingredients

Roasted vegetables

2 medium potatoes
1 small aubergine
1 small courgette
2 medium carrots
3 tbsp olive oil
Salt & black pepper (to taste)
1 tsp za’atar
Lentils
½ cup cooked lentils (green or brown)
Honey mustard dressing
1 tbsp mustard
1 tbsp olive oil
1 tsp honey
½ tsp za’atar

Instructions

Preheat the oven to 200°C
Dice the potatoes, aubergine, courgette and carrots.
Toss with olive oil, salt, pepper and za’atar.
Roast for 30–35 minutes until golden and tender.
Cook or warm the lentils.
In a bowl, mix mustard, olive oil, honey and za’atar.
Combine roasted vegetables and lentils, drizzle with dressing and mix gently.
Serve warm 🤍
