Moist Red Velvet Cupcakes
For special occasions at pangnegosyo
Yield: 20 to 24 cupcakes
Dry Ingredients:
2 1/2 cups all-purpose flour
2 tbsp unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
Wet Ingredients
1 cup fresh milk (or half evaporated milk and half water)
1/2 tbsp vinegar (to make buttermilk)
2 cups white sugar
1/2 tbsp red velvet emulco (flavoring and color)
3 medium eggs
1/2 cup (125ml) oil
Procedures
First, mix the milk and vinegar and let it sit for about 10 to 15 minutes to curdle. In another bowl, mix the dry ingredients except for the sugar and set aside. In a separate bowl, combine the sugar with the rest of the wet ingredients.
Sift the dry ingredients into the wet mixture and mix until smooth with no lumps. Fill the cupcake pans with liners and pour the batter in, filling each 3/4 full. Bake in a preheated oven at 150°C for 18 to 22 minutes.
Check for doneness by inserting a toothpick—if it comes out clean, the cupcakes are done. If there is excess batter, let it sit at room temperature while waiting for another batch to bake.
