Rendimos homenaje a uno de los grandes protagonistas del mar: el atún. Una pieza extraordinaria que, al igual que ocurre con los mejores productos, nos regala diferentes cortes, cada uno con personalidad propia: Ventresca, Morrillo y Oreja
Cada parte cuenta una historia diferente del mismo animal, demostrando la importancia de una cocina que respeta el producto y aprovecha cada una de sus posibilidades.
