Mona Salt: a gastronomic tradition of titaguas
Unlike the sweet Mona, the salty monkey is made with bread dough and inside it gets sausage, loin, hard egg and rib. It is typical in titaguas (more than 3000 in wood oven these days) and is eaten on st. Vincent's Sunday.
The Mona in titaguas, Valencia, is salty and eats on st. Vincent's Sunday. It is curious, but it is one of the most vivid traditions of the town, which already has many.

The Salty Mona is typical of the inner lands, especially in the region of the serranía, but in titaguas is where they continue to do, even more year after year. Titaguas has little more than 450 inhabitants, but between Thursday and Saturday, more than 3000 monkeys can be cooked in the wood oven.

It's customary to make a family and to eat in a gang. The Mona is not marketed. It is not for sale, nor can you put a price on it, because if you value what it contains (the raw material) and the work it carries, no one would pay the price to which every copy would be.
