💥THE BEST Celebration Cake 💥
Sponge with vanilla cream and raspberries on top👌
SPONGE:
•4 large eggs( egg whites separated from egg yolks)
•100g sugar
•100g all purpose flour
•100g potato or corn starch
Preheat the oven to 180C/ 160C fan.
Beat the egg whites until stiff peaks, add sugar in 4 part and whisk.
Add egg yolks one at a time and whisk for a short time.
Sift both flours over the bowl of the eggs and sugar mix. Best to do it in 2 parts and gently mix by hand, just until combined. Do not over mix !
Pour the mixture into 20 cm round cake tin and bake for 25-30 min. Don’t open the oven while baking!
CREAM:
•500ml whole milk
•100g sugar
• Vanilla extract
Put all the ingredients in a saucepan and heat until just below boiling point.
•100ml milk
•3 egg yolks
•2 Tbsp white flour
•2 Tbsp potato or corn starch
Mix all the ingredients together, best to use whisk.
Pour it in the saucepan with milk and sugar and keep whisking. May be worth taking it of the heat while mixing so not to get lumps. Put it back on the heat and slowly, while mixing, bring it to the boil.
It should thicken up. Set aside, let it cool.
• 200g soft butter
Beat the butter until light and fluffy. Add the cooled “milk and egg” mixture. Add it in 4-5 part, every time mixing very well.
Now all you’ve left to do is to slice the sponge in 4. If it looks a bit dry you can soak it with a little bit of warm water.
Layer with the cream and decorate it as you wish. Raspberries in my case :)
Cool it in the fridge for few hours and enjoy x

This is the time of the year when we feel under pressure to do something new: loose 2 stones, exercise 5 times a week, no sugar, no alcohol!!

💫do you feel well in general or you just put up with your digestive symptoms ignoring them every day
💫do you think of yourself as priority or you always put yourself last
Knowledge is the key. Learning to listen to your body, stop for a minute before you do something automatically. Start with yourself and focus on the journey💥
