Food Friday

Looking for a simple way to enjoy local venison?

This week we're cooking Cowal Deer venison steak with garlic butter and roasted vegetables. It's quick to prepare, packed with flavour, and lets the quality of the venison shine through.

Our venison comes from wild deer harvested in the hills and forests of Cowal and is processed right here in Sandbank. With no long journeys from farm to plate, it's a sustainable, local food source that tastes every bit as good as it looks.

Ingredients:
For the Venison
2 Cowal Deer venison steaks
1 tbsp olive oil
Salt and black pepper

For the Garlic Butter:
50g butter, softened
1 clove garlic, finely crushed
1 tbsp fresh parsley, chopped

For the Vegetables:
2 carrots, cut into batons
1 parsnip, cut into batons
1 red onion, cut into wedges
1 tbsp olive oil
Salt and pepper

Method:
Preheat the oven to 200°C (180°C fan).
Place the carrots, parsnip, and onion on a baking tray. Drizzle with olive oil, season, and roast for 30–35 minutes until golden and tender.
Mix the softened butter, garlic, and parsley together and set aside.
Remove the venison steaks from the fridge 20 minutes before cooking.
Heat a frying pan until hot. Rub the steaks with olive oil and season with salt and pepper.
Cook the venison steaks for 2–3 minutes per side for medium-rare, or a little longer if preferred.
Remove the steaks from the pan and allow them to rest for 5 minutes.
Top each steak with a spoonful of garlic butter and serve alongside the roasted vegetables.
