Oven-Baked Pumpkin With Cheese
Pumpkin is a superfood, packed with nutrients and flavour, making it a perfect standalone meal or an excellent side dish. This easy and wholesome recipe celebrates the natural sweetness of pumpkin, bringing out its best with simple preparation.
Ingredients (Serves 2-4):
1 medium butternut squash (or any pumpkin variety)
2 tablespoons vegetable oil (olive oil works well)
Seasonings to taste (e.g., salt, pepper, paprika, cinnamon, or thyme)
50g grated cheese (optional, for topping)

Method:
1. Preheat your oven to 200°C (180°C fan or Gas Mark 6).
2. Wash the butternut squash thoroughly and cut it in half lengthwise.
Scoop out all the seeds and rinse them (you can roast the seeds separately as a snack).
Keep the skin on—it’s rich in vitamins and becomes soft and edible once cooked.
If using a large pumpkin, slice it into wedges no thicker than 5cm for even cooking.
Season and Bake
3. Place the pumpkin halves or slices on a baking tray lined with parchment paper or lightly greased with vegetable oil.
Brush the pumpkin with a little oil and sprinkle your preferred seasonings evenly over the top.
Roast in the oven for 60–90 minutes, depending on the size and thickness of the pumpkin. Check for doneness by piercing it with a fork—it should glide through easily.
4. Once the pumpkin is tender, sprinkle grated cheese over the top (e.g., cheddar, parmesan, or any cheese of your choice).
Return to the oven for an additional 5–10 minutes until the cheese is melted and golden.
Serve warm as a comforting main dish or a flavourful side.
Tips:
If you don’t have butternut squash, any pumpkin variety will work well with this recipe.
Experiment with seasonings: sweet spices like cinnamon and nutmeg enhance the natural sweetness, while savoury herbs like thyme and rosemary add depth.
