When it's warm and cooking is just a bit too much effort, but you don't want to miss out on a flavoursome, nourishing lunch, we've got you covered!
SERVES

INGREDIENTS
For the chickpea mash:
🥪1 can chickpeas, drained and rinsed
🥪2 handfuls spring onions, chopped roughly
🥪2 tbsp plain yogurt or mayo of choice
🥪2 tsp mustard
🥪2 tbsp apple cider vinegar
🥪1 tsp turmeric
🥪2 pinches Profusion pink Himalayan salt, or to taste
🥪Black pepper, to taste
🥪1 tbsp lemon juice
🥪1 tbsp almond butter
🥪4 sprigs dill, leaves only
🥪Handful cress
For the rest:
🍅 6 slices Profusion protein bread
🍅Profusion almond and tiger nut butter, for spreading, or vegan butter
🍅3 handfuls cherry tomatoes, sliced lengthways
🍅3 tbsp Profusion sauerkraut
🍅3 handfuls rocket
METHOD
🥬 Mash the chickpeas with a potato masher until most of them are broke up but some remain whole.
🥬Add the rest of the ingredients for the chickpea mash and stir well to combine. Taste for seasoning.
🥬Toast the bread and then spread one side of each with nut butter or vegan butter.
🥬Top three of the slices with the chickpea mash, then pile on the rest of the fillings.
🥬Top with the other three slices of bread to form three sandwiches. Eat immediately.
