There is nothing quite like a homemade classic! 🍰✨ I made this special carrot cake for my wonderful stepdad’s 75th birthday recently. It’s my own recipe and one I haven’t made in 20 years, but it’s still just as moist and delicious as I remember — a fab combination of carrots, pineapple, banana, spices, and orange. 🍍🍌🍊

My secret 'kitchen hack' for this bake? I coarsely grate the carrots, squeeze out as much liquid as possible by hand, and then spread them out on absorbent kitchen roll to dry while I prep the rest of the ingredients. It ensures the perfect texture for this 'semi-naked' cake! 🥕👌
