Keeping Consumers Safe This Tuna Season: Guidance Shared With Local Caterers 🐟📋

Recently our Environmental Health Officers have been visiting catering establishments and sharing updated guidance on the safe preparation of wild‑caught fish especially with tuna season now underway 🐟

Wild fish can contain parasites and some species (such as tuna) can develop histamine toxins if not handled correctly.These risks are invisible which is why safe handling matters⚠️

We have reminded businesses about:

• Freezing rules ❄️ for sushi, sashimi and other raw dishes

• Safe handling of tuna 🧊 to prevent histamine (Scombrotoxin) poisoning

• The need to check for visible parasites 🔍

• Reporting of suspected illegal tuna 🚫🐟
