The first recorded definition of a cocktail, in the early 19th century, described it simply as a mixture of spirit, sugar, water, and bitters. At Humain, that definition is not reinterpreted, but distilled further, towards clarity, balance, and restraint.

Beef cheeks are among the most rewarding cuts in the kitchen. Given time and patience, they develop depth and texture that few others can match. Here, their richness is met by the earthy sweetness of parsnip, while a carefully reduced demi-glace brings the two into focus.
