Colourful, flavour-packed and perfect for the barbecue 🌶️🥒🍄
These chargrilled veggie kebabs are an easy way to add more veg to your BBQ spread.
Ingredients:
50g ciabatta, chopped into large pieces
1 pepper cut into large pieces
120g halloumi cheese, cut into large pieces
1 courgette peeled into ribbons
180g mushrooms, halved
2 onions, cut into thin wedges
1 fresh chilli, chopped finely, optional
Zest of 1 lemon
2 tbsp of olive oil
2 sprigs of fresh rosemary, chop leaves finely
200g tomatoes
Method:
1. Soak 12 skewers to stop them from burning on the barbecue.
2. Place all the vegetables into a large bowl, along with the chilli, lemon, rosemary and olive oil
3. Mix everything in the bowl
4. Leave to marinate in the fridge
5. Thread the ingredients onto the skewers and place on a tray
Place the skewers on the barbecue and cook for around 8 minutes, until 6. cooked through, turning every 2 minutes to ensure all sides are golden
