Todays bounty 🖤❤️🧡
Rosehips, haws, sloes and I found some late flowering red clover which will infuse in vodka for a few weeks....blackberries are still abundant in some sheltered places.. Unfortunately, I missed the boat for the elderberries again(!!) this year and didn't collect half as much as I wanted ... They come and go very quickly especially in wet and windy weather.

Pineapple W**d (Matricaria Discoidea)

If you like camomile tea you will probably love a tea made by infusing a few flowers in boiling water for a few minutes.
When crushed, the flowers release their aroma which is a cross between camomile and pineapple.
It is a very common 'w**d' and thrives in wasteground, dirt tracks and persists even when walked upon. It is in season now!
The flowers and the leaves can be eaten raw, in a salad and the flowers also make a delicious syrup and used to drizzle over ice-cream or diluted with sparkling water.

1.8 litres water
1.5kg white sugar
Zest of 1 lemon
20 pineapple W**d flowers

Bring water, sugar and lemon zest to a boil until reduced by half.
Take off heat and add pineapple W**d flowers.Leave to infuse over night and strain into sterilised jars.
Will keep in the fridge for a few weeks or you could freeze in ice cube trays.
