OatFull Energy Balls 💥💫
Ingredients
- 1/2 cup peanut butter
- 1/4 cup honey
- 1 cup OatFull (ground into a coarse flour in a blender)
- 1 teaspoon pure vanilla extract
- 1 tablespoon mixed seeds
- 1/4 cup chocolate chips (can be replaced with chopped raisins or other chopped fruit)
Method
- Heat the peanut butter and honey for 15-30 seconds in the microwave
- Add to a medium bowl with the other ingredients and stir thoroughly
- Use a tablespoon-size measuring spoon to portion and roll into balls
- Squeeze the batter, then roll into a ball to help it hold together easily
- Roll the balls in the mixed seeds until lightly coated

Savoury OatFull oatmeal with sautéed mushrooms, poached eggs & avocado 🍲
Serves 2! ⭐️
Ingredients
Oatmeal:
- 1 cup unsweetened plant based milk
- 1 cup water
- 1 cup OatFull
- Black pepper and chilli powder
Toppings:
- 200g sliced button mushrooms
- Olive oil
- 2 eggs
- 1 avocado
- Coriander
Method
1. Bring water and milk to a boil, stir in oats and reduce to a simmer. Cook for about 10 minutes until the oatmeal has thickened. Season with a pinch of salt, pepper and chilli powder.
2. Meanwhile, heat some olive oil in a large pan. Add mushrooms, a pinch of salt and black pepper and sauté for about 8 minutes until liquids are released and absorbed.
3. Bring some water to the boil in a separate pot and add the eggs. Lower to a medium heat and cook for 2 1/2 minutes.
4. Divide the oatmeal between bowls and serve with the mushrooms, poached eggs, coriander, sliced avocado and black pepper.
5. Enjoy!
