●For the Chicken Française

Chicken breast - 400 grams
Eggs - 3 to 4 numbers
Finely Chopped parsley - handful
Grated parmesan cheese - handful
Flour - to dredge chicken
Olive oil - 3 tablespoons
Butter - 20 grams
Salt and Pepper to taste

●For the Lemon Butter Sauce

White wine - 250 ml
Chicken stock - 400 ml
Flour - 2 tablespoons (or cornstarch slurry - 1 tablespoon)
lemon/ Lime juice - Half lemon/ lime
lemon/Lime slices - 3 or 4 thin slices
Chopped parsley - handful
Salt and Pepper to taste

The scarlet orange flame of the forest (Butea monosperma/ palash) dazzles to glory. The strikingly beautiful golden clusters of yellow silk cotton tree (Cochlospermum religiosum/ butter cups) is a show of 'the Midas touch'.
