This herby mushroom spinach sandwich is crisp and refreshing, making the most out of summer's produce bounty. Hung curd acts as a creamy alternative to mayonnaise to reduce the calories
In 1tsp oil, sautee 2tbsp chopped onion and 1tsp garlic for a minute. Add 1/2 cup mushroom and sautee for 7-8 mins. Add 1 cup chopped baby spinach and sautee for another 3-4 mins. Add himalayan pink salt to taste and 1/4tsp black pepper powder. Add your hung curd and give it a good mix.
On a slice of multigrain bakery bread, spread the mixture and toast or grill it.
