40 Years of Norwegian Salmon Sushi

In 2025, Norway marks 40 years since salmon became a global sushi sensation. In 1985, Norwegian officials launched “Project Japan” to promote salmon as sushi. At first, Japanese consumers rejected it due to fears of unfamiliar color, taste and texture.

A major breakthrough came when a supermarket chain agreed to sell 5,000 tons of frozen Norwegian salmon as sushi-grade fish. This opened the market.

As sushi spread worldwide in the 1990s, Norwegian salmon followed. Today, it’s exported to 113 countries. In 2024 alone, exports reached 1.3 million tons, worth NOK 123 billion – a true export triumph.
