When you think of Vindaloos and Sorpotels, chefs tracing their roots to the East aren't the first to sprint to mind. When said chef from the East is based in Chattarpur, the doubts only multiply. Vaibhav Goswami reminded us of the importance of being unprejudiced at first bite.
Every chef has a forte. Vaibhav's seems stem from some long-forgotten Goan blood flowing through his veins. He cooks like a local, uses quality ingredients and is extremely responsive to clients' requests.
His menu consists mostly of Goan Christian staples and if the monsoon has you thinking about sipping on a glass of port while watching the heavens and the ocean meet, let Chef Goswami put those dreams on your plate.
Insider tip: Vaibhav lists Sorpotel and Xacuti as his specialty but his Pork Vindaloo is pretty damn good too. But you best find out for yourself.
